At Anna's Honey, we are proud to carry Fireweed Honey. Anna's Fireweed Honey is produced once a year in limited quantities. As a favorite of Bee Keepers, Fireweed Honey has received the title "the champagne of honeys".
What is a Fireweed? Fireweed is a tall perennial (a plant that blooms every two years). When a forest has burned, Fireweed is one of the first signs of life to appear. Thin stalks of Fireweed shoot up out of the blackened soil, then carpet the charred land with a bouquet of red-purple flowers that can grow over six feet tall. When new growth takes over the forest the Fireweed plants recede.

Fireweed only blooms for a week and the nectar flow occurs only when the humidity is less than 50%, so the quantities of Fireweed Honey produced can vary greatly from year to year. The photo at the top of this page shows actual Pacific Northwest Fireweed plants in bloom.

Fireweed honey is very slow to crystallize. Honey is not hurt in any way when it does crystallize and it can been brought back to liquid consistency by setting the jar in a pan of warm water for about 30 minutes. Do not boil. To test the water temperature, place a few drops of the warm water on your wrist, if it is warm and comfortable then the water is just right.
