    Learn More About Fireweed Honey

Washington State's premiere honey company, Anna's Honey produces five varieties of gourmet raw honey featuring flavors derived from Pacific Northwest floral plants.

The original company, Anna's Gourmet, founded by Arlene Page in 1980, was named after Arlene's great grandmother who settled in the Kittitas Valley region of Washington State during the 1880's. Anna's Honey products contain no artificial preservatives or additives. We use only farm fresh, hive-ripened, 100% pure US Grade A raw honey.

At Anna's Honey, pure honey is filtered at 200 microns which lets the natural pollens come through to give you a rich, smooth texture. With over 30 years of experience, Anna's Honey believes that leaving the bee parts and wax remnants in the honey is detrimental to the purity of the product. The wax capping serves as a protective barrier from impurities getting into the honey while in the hive. So, during production the wax capping is removed and melted down for beeswax.

Anna's honey is carefully tested for purity and retains low moisture for a thicker consistency. Anna's Honey uses this process to give you a richer, creamier, and satisfying natural honey.

    Honey Spiced Nuts
    Makes 3 cups

    1/2 cup pure honey
    2 Tbsp. butter, divided
    1/2 tsp. grated orange peel
    1/2 tsp. ground cinnamon
3 cups raw nuts (walnuts, pecans, cashews, almonds, etc.)

    Prep time: 5 minutes
    Cook time: 8 minutes

In a heavy pan, combine honey, butter, orange peel and cinnamon. Heat to boiling over medium-high heat, stirring constantly. Reduce heat to medium, and cook to 235°F. Stir in nuts and continue stirring 4 to 5 minutes more until nuts are glazed. Pour onto parchment paper or buttered foil and spread into a single layer to cool.

    Prep time: 5 minutes
    Cook time: 20 minutes

Preheat oven to 325°F. Line a 13x9x2 " pan with foil. Tear another sheet of foil the same size and place on counter; butter both. Pour nuts into pan; set aside.

In a microwave-safe, 1-cup measure, combine honey, 2 tablespoons butter, orange peel and cinnamon. Microwave 60 to 90 seconds, stirring occasionally, until butter is melted. Pour honey mixture over nuts and stir until all are coated.

Bake for 20 minutes, stirring every 5 minutes. Remove from oven and pour onto reserved buttered foil, spreading nuts into a single layer to cool. Store in airtight container.

    Exceptional Fireweed Honey

From the midwest and have always enjoyed the varietal flavors of honey from different producers. I was introduced to Anna's Fireweed Honey while visiting friends in Seattle. After using the last of my "Anna's" Fireweed Honey, I shopped online and purchased two other brands, thinking they would taste just the same. I don't know what is involved in honey production. I do know that I wont shop elsewhere for honey. Anna's Fireweed Honey is a delicate flavorful masterpiece and thoroughly addictive. I also find the other flavors exceptional and have found nothing to compare to the quality of Anna's honey products. After giving Anna's Fireweed Honey to my 4 siblings and 12 nieces and nephews at Christmas last year, I know now that I stumbled across a great find. My family has requested more Anna's honey so I'm shopping early.
