Strawberry Salad with Honey Balsamic Reduction
Light & Bright Springtime Salad
FOR THE BALSAMIC REDUCTION:
- 1/4 cup - Anna’s Honey
- 1 cup - balsamic vinegar
FOR THE SALAD
- 1 pound - mixed spring greens
- 2 cups - fresh strawberries
- 1/3 cup - extra virgin olive oil
- 1/2 cup - feta cheese
- 1/2 cup - slivered almonds, toasted
Dressing: Place balsamic vinegar in a small saucepan. Bring to a boil, reduce to a simmer. Cook until reduced in volume by half, about 15 minutes. Add honey and cook until mixture is a thick syrup with consistency similar to honey. Remove from heat.
SALAD: Arrange greens on a platter. Add strawberries on top. Just before serving, drizzle salad with olive oil, then drizzle a stream of balsamic reduction over the salad. Top with cheese and sliced almonds.
